Baikohken Interior - When Ryner, his gf and i found the shop, it looked like exactly like those ra-men shop one often sees in J drama. It was cosy place and the staff are mostly Japanese, except the waitresses ..LOL. The interior of the shop is mostly made up of wood, from tables to chairs and the counter, a very nice touch. The kitchen is fully exposed, and you can marvel at the skills of the chef, preparing the ra-men, but it makes the whole environment very humid and warm. The whole shop is filled with the aroma of ra-men. Food - Ryner: Shio Char Siew Ra-men Me: Shoyu Char Siew Ra-men Ryner's Gf: Miso Char Siew Ra-men (half portion) Additional orders: Ajitama + Gyoza Firstly, if you are not a heavy eater, be warned! The portions of the Ra-men are GENEROUS & HUGE!!! from the noodles to the Char Siew. I can say, it almost twice the amount you usually get from Tampopo or Marutama. The noodles are springy, firm, smooth and Q. Soup base: Shoyu - tasted very similar to the sauce when you order the Shoon Hock Fish. Its very flavorful, yet not too salty or overpowering. Shio - made with garlic and some sea salt. (Ryner please comment) Miso - Very Shiok! Very rich! You can taste the miso and even so, it doesn't come off as overwhelming. Ajitama - The egg is splendid! Its just firm enough to cointain the yolk which is runny. The outside is very wobbly and soft! one word: SUGOI! Char Siew - Generous portions! Huge slices! MELTS in your mouth! Its very soft and tears easily! The Char Siew seems to be wrapped up after marinating and placed in the fridge. Seems like its prepared as if it was a cold dish. Here's a better and more detailed review to justify Baikohken.![]() Soup Base In general, the soup base of this ramen restaurant is on the light tasting side and it is rather oily. On the other hand, Santouka did a fantastic job in balancing the oiliness of the soup, making their soup base 1 of my favourite. Shoyu (Soy sauce Base) typically a brown and clear color broth, based on a chicken and vegetable (or sometimes fish or beef) stock with plenty of soy sauce added for a soup that’s tangy, salty, and savory yet still fairly light on the palate The soup base is more light tasting as compared many other I've tasted. Not much to complain because I am more of a heavy tasting soup base kinda guy. Personal Rating: 7/10. Shio (Salt Base) Pale, clear, yellowish broth made from plenty of salt and any combination of chicken, vegetables, fish, and seaweed. Occasionally pork bones are also used, but they are not boiled as long as they are for tonkotsu ramen, so the soup remains light and clear. Shio is generally the healthiest kind of ramen Very refreshing and light tasting but it will be better if it can be slightly saltier. That will tempt the customer to continuously slurp down the soup, mouthful after mouthful. Personal Rating: 8.6/10 Miso Broth that combines copious amounts of miso and blended with oily chicken or fish broth – and sometimes with tonkotsu or lard – to create a thick, nutty, slightly sweet and very hearty soup. Miso ramen broth tends to have a robust and tangy flavor The Miso base is very strong with no taste of flour and powder seasoning. But it may taste quite sickening if you are to finish up the whole bowl of soup. Personal Rating: 8.4/10 (Not a miso soup kinda guy.) ![]() Noodle Noodle ain't that fantastic. They are of the same quality as Marutama but sadly the springiness of the noodle is not up to standard. The biting sensation is a little disappointing, it feels a little floury when I bite onto the noodles. Personal Rating: 6/10 Char siew The quantity is probably the highlight of the Char siew. Just like in the past when Beppu ramen also serves 4-6 pieces of char siew. It was like 6years back when I tasted the best tasting char siew in Singapore. But standard of Beppu ramen dropped quite badly after expanding. Beppu Ramen's(6 years ago) char siew was the traditional kind where the chef rolls up a big slice of char siew and did some stewing and roasting. The fibre of the char siew just breaks naturally yet retaining its "strains" together while the fats melt when you chew on it softly. The outer layer is just so sinful(Often, I will request the chef to save the end parts of the rolled up char siew for me). Slightly smoked and a burst of roasted aroma when u savour it. OK, back to Baikohken. Their char siew is soft and nice, the meat and the fats dissolves easily in your mouth but the meat lack of definition (the feeling of the fibre of the meat when you chew on it) and the outer layer seems to lack of the roasted sensation. Personal Rating: 8/10 (high score for quantity.) Ajitama (Egg) It is near the golden standard (Tampopo). The yolk is just right and the softness of the egg white is also near but what lacks is the outer layer of the egg. It lacks of the glossy surface. If the outer surface is slightly harder too, it could be tampopo's match. Nevertheless, I still ordered 2 portions of it. LOL Personal Rating: 7.9/10 Menma (Dried Bamboo) The Menma they serve is really big in size. Surprisingly, the Menma they served are easy to chew on and light tasting. Many other typical ramen restaurants serves small narrow pieces which are are on salty side. Personal Rating: 8.8/10 Additional Comments They serve a hell lot of spring onions, it will be better if they could lessen the quantity of spring onions which is literally spammed onto your bowl of ramen. Even though, the spring onions still goes very well with the soup base. REFRESHING! In conclusion, Baikohken is a must-try place for its price-to-quantity/quality ratio. It really puts shame to all the typical ramen restautants in Singapore. For less than $20, you get yourself a full bowl of ramen(Bigger sized than typical servings, half bowl is just like what you are served as regular serving in restaurant) with some additional toppings that for sure will satisfy your hunger, even for a big guy. ***I am judging ramen with my many years of consumption experience and also a 2 years working experience in a ramen joint. Personal Rating: 7.9/10 (Would have been worse but thanks to the quantity of the charsiew) |
